Mocha Frosting Recipe: Delicious. (cake optional)

Edible Moments shared this delicious mocha frosting recipe, designed to go on her chocolate mayonnaise cupcakes that didn’t quite cut it.  So, she shares the mocha frosting recipe that was still quite a hit.

Mocha Frosting:

1/2 cup butter
1/4 cup cocoa powder
2 cups icing sugar
2 tbsp instant coffee powder
2 tbsp hot milk
2 tbsp whipped cream

1) Dissolve instant coffee into hot milk.
2) beat butter Icing Sugar and Coffee mixture
3) add Cocoa powder
4) Add the whipped cream, and beat until smooth and creamy.

Beet Frosting Recipe On Beet Chocolate Cupcakes: Boy, Am I Beet!

Food Mayhem shared this delightful recipe for beet chocolate cupcakes dressed with a beautiful pink beet frosting.   If you’ve sliced and cooked beets, you know their deep red color is potent!  While the chocolate cupcakes with beets reportedly weren’t too beet-y, this beet frosting is too adorable to pass up.

Beet Frosting

* 4 cups confectioner’s sugar
* 1 tablespoon beet powder
* 8 ounces cream cheese, softened
* 8 tablespoons unsalted butter, softened
* 2 teaspoons vanilla extract

Instructions

1. Preheat oven to 375 degrees F. Line muffin tins with paper liners.

2. Melt chocolate (70% dark provided by Askinosie Chocolate) and 1/4 cup (4 tablespoons) butter over a double boiler. Set aside to cool.

Sour Cream Frosting Recipe Perfect With Carrot Cupcakes

While we often see carrot cakes with cream cheese frosting, sour cream is a tangier option.  (Plain yogurt may serve as an alternative). Slightly thinner than cream cheese frosting, it is best suited to cupcakes.  Sour cream and cream cheese are comparable in fat content, so no cutting calories there.  However, this sour cream frosting is the perfect foil to the carrot and pineapple-packed cake.  Sounds and looks delicious!

Sour Cream Frosting

4 Tbsp butter, softened
1/2 cup HP Hood Sour Cream
1/2 tsp vanilla extract
1/2 tsp lemon juice
1/4 tsp salt
2-3/4 cups confectioners’ sugar

In a medium bowl, mix together all ingredients, except powered sugar, until well combined. With an electric mixer on slow, add confectioners’ sugar, beating until smooth. Decorate as desired.

(Note: We think you’d be ok with any brand of sour cream you have available).

Peanut Butter Frosting Recipe: Simple and Delicious

There’s nothing like the combination of slightly salty peanut butter and sweet dark chocolate.  This reproduced recipe recommends trying this simple peanut butter frosting on brownies, and we agree!  Perhaps it would be nice on chocolate cake, banana-chocolate chip cupcakes, or even a berry-flavored cake reminiscent of a peanut butter and jelly sandwich. (is that weird?)

Ma Moore’s Peanut Butter Frosting (NY) Recipe

Ingredients

5 tablespoons butter, softened
1 1/2 cups plus 2 tablespoons confectioners’ sugar
1/8 cup cocoa powder
1 teaspoon vanilla extract
1 cup smooth peanut butter
1/2 cup skim milk (other types of milk can substitute)

Instructions In a large bowl, mix the butter by hand with the confectioners’ sugar and cocoa powder. Stir in the vanilla. Add the peanut butter, and mix until the texture resembles small beads. Add the milk slowly, beating with a mixer until very creamy. Add up to 3 additional tablespoons of milk if necessary to achieve the desired consistency.

Cupcake Frosting Tips Always Useful

Using special patterned pastry bag tips, and colorful baking cups are just a few helpful cupcake frosting tips we came across in this article.

Also suggested is improvising with a ziploc bag if you don’t have a pastry bag.   This is also nice because some pastry bags can be large and difficult to control.  However, you may not be able to use the decorative tips on a ziploc bag.

“For a fancy touch, add food coloring to coarse decorating sugar, which is available at specialty shops. Pour the tinted sugar into one palm, and twirl the frosted cupcake’s edges through the sugar with your other hand. Wearing gloves keeps icing from sticking to your fingers.”
