Anyone who has ever made or purchased a cake, or even celebrated a holiday with a cake, will get a laugh out of this article and its subject, Cake Wrecks.  You can only imagine the cake frosting mishaps and miscommunications that have given rise to these hilarious cakes.

Misspellings and pro baking train wrecks are the focus of  Cake Wrecks, a blog and new book.

“Fortunately for Ms. Yates, an enormous number of those problems go unnoticed. She said she receives 50 to 60 Cake Wrecks submissions a day via e-mail, and usually posts between one and five photos each weekday morning. She posts only professionally made cakes (“It’s too easy and mean to go after your Aunt Sally’s cake wreck,” she said) and nothing excessively gory or obscene.

Much of the joy in following Cake Wrecks comes from Ms. Yates’s wry assessment of every plopped-out flower and bug-eyed snowman. She is particularly savage about punctuation mishaps, like when a baker omitted an exclamation point after the inscription, “Way To Go Bob.” Ms. Yates wrote, “Just try to read this cake without sounding sarcastic. Yeah. Exactly.” Beneath a Father’s Day cake that starkly announced “1 Dad,” the caption read, “Of all the Dads out there, you are one of them.”

Yogurt Frosting Recipe: Your Cupcakes, Only Lighter

When cream cheese or buttercream frosting seem too heavy, or, you’re looking for a frosting recipe with a slight tangy flavor, yogurt frosting may be the way to go.

Yogurt frosting is an excellent compliment to fruit-flavored cupcakes such as berry or citrus.  It can also be a substitute for anywhere you’d use cream cheese frosting, such as on a carrot cake.  It works best with sweet flavors like a dark chocolate or honey, giving balance to each bite.

Be sure to use a thicker yogurt to keep frosting spreadable.   We recommend this for cupcakes over full-size cakes due to the thinner consistency.  Try to keep the frosting cool so it doesn’t drip down the sides.

Greek Yogurt Frosting Recipe

Here is the recipe for the Greek yogurt frosting from Souvlaki for the Soul, reprinted with my notes.

1 C Greek yogurt (I used Stonyfield Farms)
A good splash of vanilla extract (I used 1 t)
1/2 C powered sugar, sifted

1. Whisk all ingredients until they become a bit thick.
2. Place in the fridge to thicken even more (at least 30 minutes).
3. Spread on cupcakes.

White Chocolate Mint Frosting Recipe

Craftcake shared this fabulous white chocolate mint frosting recipe, that has a delicate pale green color that beautifully accentuates deep chocolate cake.  Enjoy!

White Chocolate Mint Buttercream Frosting

yield 2 3/4 cups

Ingredients

  • 2 sticks (1/2 pound) unsalted butter, softened
  • 12 ounces white chocolate
  • 1 cup confectioners’ sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon peppermint extract (do not use mint)

Directions

  1. Melt the white chocolate in the microwave and stir. Note: Follow the directions on packaging for melting. Set aside to cool.
  2. Using a handheld or stand mixer beat the butter in a large bowl at medium speed until creamy.
  3. Add the melted white chocolate and beat until well combined. Be sure to scrape the sides down.
  4. Add the confectioners sugar, mint,  vanilla and a drop of green food coloring and beat at low speed, scraping the sides and bottom of the bowl, until light and fluffy.

Sweet! Avocado Cake Frosting

We love unusual frosting recipes and while this may not sound appetizing at first, it looks from the photos that it was quite a success.

Blending avocado into sweets is actually fairly common throughout the world.   The combination of chocolate and avocado is quite tasty in a shake or smoothie.  The avocado provides both good fat and flavor that can vary depending on the ripeness.  It also gives a smooth texture.

Branny suggests a fruit or carrot cake for her recipe below.  We also think chocolate cake works beautifully.   For another version, check out Joy the Baker’s vegan chocolate avocado cake.

Avocado Cake Frosting

Ingredients (slightly modified from Alton Brown)

*I halved the original recipe since I was very wary of the results of this frosting only frosting one 8″ cake.  It was the perfect amount.

4 ounces avocado meat, approximately 2 small to medium
1 1/4 teaspoons freshly squeezed lemon juice
1/2 pound powdered sugar, sifted
1/4 t cream of tartar (don’t ask me why I added this, I have no idea, I am not a baker, it just felt right)

*I suspect that the ripeness of the avocado may cause you to increase or decrease the amount of sugar needed to reach your desired texture.  So, add incrementally.

Directions

Peel and pit the avocado. Place the avocado into the bowl of a stand mixer fitted with the whisk attachment along with the lemon juice and beat until lightened in color, approximately 2 to 3 minutes. Add the powdered sugar a little at a time and beat until smooth.  Store in the fridge away from air.
