Kipper has some great, simple recipes for all kinds of foods, but we liked this straightforward banana cake with caramel nut frosting.   The great thing about this frosting recipe is that you can always keep these items stocked in the pantry if the spirit suddenly moves you to make a cake with caramel nut frosting. Caramel Nut Frosting

3/4 cup brown sugar

6 tablespoons butter

5 tablespoons canned milk

1 cup chopped nuts

Beat together and spread on warm cake. Put under broiler until topping browns just slightly (Not too long!).

Easy Icing: Banana Frosting Recipe From the Miami Herald

Calling for overripe bananas, this easy banana frosting recipe has a fresh, creamy taste .  A squeeze of lemon juice also enlivens this delicious frosting recipe.

The article provides a banana cake recipe to accompany the frosting, but we think a vanilla or chocolate cake would work beautifully as well.

Banana Frosting Recipe
3 overripe bananas, mashed (1 ½ cups)
1 tablespoon lemon juice
1 teaspoon vanilla
1 tablespoon milk
2 cups confectioners’ sugar

Instructions

Mash bananas thoroughly a second time with the lemon juice and scrape into bowl of an electric mixer. Add the vanilla and milk; beat well. Gradually beat in the confectioners’ sugar. Because the size and ripeness of the bananas will affect the flavor and consistency, taste frosting and adjust sugar, or if too stiff, add a little milk. Beat on medium-high speed for 3 minutes, until the frosting is very creamy.
